Galactinol, an α-galactoside of inositol that has been isolated from sugar beets, serves as a galactosyl donor in the transglycosidase-catalyzed biosynthesis of the raffinose family. It is generated from <em>myo</em>-inositol and uridine diphosphate galactose in a galactosyltransferase-catalyzed reaction.
