L-(+)Sodium glutamate, commonly referred to as monosodium glutamate (MSG), is the sodium salt of glutamic acid, an amino acid naturally found in many foods, including tomatoes and cheese. It is widely used as a flavor enhancer in cooking, particularly in processed foods, soups, and snacks. MSG enhances the umami taste, one of the five basic tastes. While considered safe by regulatory bodies, some individuals may experience sensitivity to MSG, known as “Chinese Restaurant Syndrome,” with symptoms like headaches or flushing.
